These easy buffalo cauliflower bites are DELICIOUS. I finally bit the bullet, after seeing them all over Pinterest for the longest time, and made them myself. No regrets, my friends. They are so good and surprisingly easy to make! I may or may not have eaten the whole two servings myself, haha. Unfortunately Cole wasn’t home at the time that I made these, so I have yet to convince him that cauliflower can be delicious (he thinks it’s the worst ever, haha), but I definitely will sometime soon because I can’t wait to make these again! Also, I have been watching too much Food Network lately because CHECK. THAT. SAUCE. SPLATTER. Professional chef, if I do say so myself (that is total joke, by the way.. I’m not a great chef in any way whatsoever, haha. Read the notes at the bottom of the recipe to learn about my mishaps with these bites!).

Easy Buffalo Cauliflower Bites
- 1 head of cauliflower, chopped into bite size pieces
- 1/2 cup of milk
- 1/2 cup of water
- 3/4 cup of flour
- 1/2 tsp of onion powder
- 1/2 tsp of garlic powder
- 1/2 cup of buffalo sauce
- hot sauce, as desired
- 1 & 1/2 tbsp melted coconut oil (or butter)
- Heat oven to 425 F
- Whisk together milk, water, flour, onion powder and garlic powder to create batter
- Dip cauliflower pieces into batter, let the excess batter drip off and place on lightly greased baking sheet
- Bake battered cauliflower for 20-25 minutes, until the batter has gelled around the pieces
- While the cauliflower is baking, mix together buffalo sauce and melted coconut oil, and add hot sauce as desired to add more spice to the sauce
- Take out cauliflower and carefully dip in buffalo sauce mixture
- Place fully coated buffalo cauliflower pieces on a clean, lightly greased pan
- Bake for another ten minutes, until cauliflower is just starting to brown
- Remove from oven, let cool just a little and serve
One quick note: make sure you let ALL the excess batter drip off. It’s slightly painful to wait for that, but worth it. If you put your buffalo cauliflower bites on the pan still dripping with batter, it’ll make a little pool of batter beneath them and the little batter pool will bake along with the buffalo cauliflower.. so you end up with flat-sided crunchy pieces that are more susceptible to burning. Believe me, I did it. Don’t do it ;) Other than that, these are super easy and delicious, so enjoy!

There are so any cauliflower haters! I love cauliflower and use it in a ton of recipes. I want to try these out. I recently experimented with kale chips and it didn’t go well. Hopefully these will work out better for me :)

I kid you not – I am a cauliflower fiend. I looooooooove cauliflower. And, you had me at BUFFALO. That word alone makes my mouth water something awful. This would be a great dish to add to a dinner where you are hosting vegetarians, as well! My mother would LOVE this! I’d need both these AND some wings, though! <3

yeah i’m definitely not a fan of cauliflower at all and not sure i would go out of my way to try this recipe.. but if you were to send me some to try.. i will give it a chance! haha i guess i used to hate brussel sprouts but i love them now.. so tastes can change over time.

I haven’t had cauliflower in ages because – well, I moved and now I have to cook for myself, and I got the hang of broccoli and I’ve mostly been sticking to that. But I love cauliflower. I’m picky about how I’ll eat it but this recipe sounds really good!

Oh I have been on the hunt for a new cauliflower recipe. Thanks, we eat a head of cauliflower a week. We head the cauliflower, add a can of chick peas washed. Put that all in a plastic bag and shake with three tablespoons of olive oil. Put on cookie sheet and bake until slightly soft and brown.
Then put 1/4 cup of olive oil 1 table spoon of dijion mustard, seeded mustard and red wind vinegar all together and whisk. Pour this over the finished cauliflower and chick peas and EAT :)
